I knew fresh tomato sauce would be amazing, but I had no idea it would change almost every other tomato-based dish I made into the most amazing dish, too! The difference between your regular store bought tomato puree, strained tomatoes, or canned diced tomatoes (even if organic!) and this fresh, homemade, taste-the-sunshine-in-the-tomatoes sauce is unfathomable until your tastebuds jump out of your mouth and smack you across the face for not having tasted this sooner!

Our veggie gardens are 100’x30′ and 75’x25′ and BOTH of them were dominated by tomatoes this year. We love tomatoes, and I’ve always told Neil that having too many tomatoes is a problem I’d like to have, and as every good partner should, he said he’d do his best to make sure I got to experience that problem someday. With the serious drought we faced this past summer, somehow the tomatoes prevailed and dominated our gardens, and we’re still picking bushel after bushel almost every other day! We have around twenty heirloom varieties, all grown organically.

To capture the goodness, we rose to the challenge of canning the bounty. We hand pick each tomato, wash it with our pure spring-fed well water, bring it to a boil, put each lovingly though a food mill to get rid of any seeds and skin, and then cook down the beautiful tomato juice for 5 hours or so until it’s about half its original volume. Once our pure tomato sauce reaches a rich, delicious consistency, we pour it into litre size sterilized mason jars with a little organic lemon juice, and process the jars in a hot water bath for 45 minutes more. No salt, no preservatives, just simple, pure tomato goodness that will make every tomato dish you make sing with the bright sunshine of summer.
